    Chick Fil a Cobb Salad is traditionally an American salad with chicken and hard boiled eggs. Of course, my version doesn’t have all of that, but I still wanted to make it completely irresistible and high in protein!

    This salad is therefore embellished with oven roasted chickpeas with nice spices and tofu or tempeh “bacon” which I can’t resist! In addition, the creamy ranch dressing tops it all off. This is quite one of my favorite salads of the summer and I encourage you to put it on the menu soon because the whole family will love it (my kids really liked it, try it on yours right away!).

    3 portions:

    Crispy chickpeas

    • 1 cup (or 1/2 can 540 mL) drained and rinsed chickpeas
    • 1 tbsp (15 mL) vegetable oil
    • 1/2 tsp (2.5 mL) onion powder
    • 1/2 tsp (2.5 mL) garlic powder
    • 1/2 tsp (2.5 mL) paprika
    • 1/4 tsp (1.25 mL) smoked paprika
    • Pinch of salt and black pepper, to taste
    Tofu (or tempeh) “bacon
    • 112 g (1/4 lb) firm tofu or plain tempeh, small dice
    • 1 tbsp (15 mL) vegetable oil
    • 2 tbsp (30 mL) maple syrup
    • 1 tbsp (15 mL) soy sauce
    • 1 tbsp (15 mL) baking powder
    • 1/2 tsp (2.5 mL) smoked paprika
    • 1/4 tsp (1, 25 mL) liquid smoke
    Veggie ranch sauce
    • 1/4 cup (60 mL) vegetable mayonnaise
    • 3 tbsp (45 mL) vegetable drink (oats, soy, etc.)
    • 1 tbsp (15 mL) lemon juice
    • 1 tbsp (15 mL) dried parsley
    • 1 tbsp (15 mL) dried chives
    • 1 tsp (5 mL) garlic powder
    • 1 tsp (5 mL) onion powder
    • 1 1/2 hearts romaine lettuce, chopped
    • 1 large tomato, diced
    • 1/2 cup (85 g) frozen corn, thawed
    • 1/3 of a red onion, cut into strips
    • 1 avocado, diced

    Instructions for Chick Fil a Cobb Salad :

    Crispy chickpeas

    Preheat oven to 400 F (200 C) and line a baking sheet with parchment paper. Drain and rinse the chickpeas, then coat them with the oil and spice mixture. Spread evenly on the prepared baking sheet and bake for 20 minutes. Meanwhile, make your tofu (or tempeh) “bacon”.

    Dice the tofu (or tempeh). Heat a frying pan over medium heat and add the vegetable oil. Brown the diced tofu – or tempeh- for 4 minutes, stirring occasionally. Reduce heat to low and add all the remaining ingredients to give a smoky taste. Continue cooking, stirring for 1 to 2 minutes so that it is well coated, then set aside.

    Veggie ranch sauce

    Mix all ingredients together in a small bowl and set aside in a cool place. Now assemble your chick fil a cobb salad. Mince your lettuce. Dice the tomato, red onion and avocado. Divide evenly between large bowls, adding your thawed corn, crispy chickpeas and tofu (or tempeh) “bacon”. Drizzle generously with veggie ranch dressing and serve immediately. If there are any leftovers, add the ranch sauce just before serving.
